1 tsp salt
1 cp corn meal
Into 4 cps boiling water to which 1 tsp salt has been added, sprinkle gradually,
so that boiling will not be interrupted, 1 cp corn meal.
2 - Let it cook for 10 minutes over direct heat, stirring continually.
3 - Then, placing the container in the lower part of a double boiler, let the cooking
continue 40 minutes to 3 hours (the flavor will improve with longer cooking).
4 - When the mush is to be used for frying, it may be prepared by mixing 2 cps corn-meal,
and 2 tsp salt with 2 cps cold water before stirring into the 4 cps of boiling water.
5 - Then proceed as above.
6 - When the mush is thoroughly cooked, pour it intom a square mold to cool for future use.
