1 cp rice
3 cps boiling water
1 tsp salt
1 - Rice should be washed thoroughly, rubbed well through the hands, with
the water changed several times until it shows no cloudiness.
2 - To about 3 cps boiling water and 1 tsp salt inn the upper part of a double boiler
add 1 cp rice (well washed) putting it in gradually and stirring with a fork
3 - After boiling 5 minutes over direct heat, let it steam inn the double boiler for
45 minutes or more, until kernels feel soft when pressed between the finger and the thumb.
4 - If desired use only half the quantity of water and when it has been absorbed put in
scalded milk tom fill up the quantity of liquid.
