Shirred (or Baked) Eggs
buttered bread crumbs
1 - Into buttered ramekins or egg-shirrers sprinkle buttered crumbs, then carefully slip
into each and egg from the cup into which it had first been broken.
2 - Add seasonibng of salt and pepper and a layer of buttered crumbs before baking
in a moderate oven until the crumbs are browned and the white of the egg is set.
3 - The crumbs may be omitted and simply a little butter, with salt and pepper, placed on the top of the egg
