1/2 tsp salt
1/2 tsp sugar
1/2 tsp mustard
a bit of cayenne pepper
1 egg yolk
1 tbsp vinegar
1 tbsp lemon juice
3/4 cp olive oil
1 - Sift and stir together 1/2 tsp salt, 1/2 tsp sugar, 1/2 tsp mustard and a bit of cayenne pepper.
2 - With them mix well 1 egg yolk.
3 - Now while stirring steadily, put in 1 tbsp vinegar and 1 tbsp lemon juice.
4 - Take 3/4 cp olive oil and begin adding it drop by drop to this mixture, continually stirring.
5 - After a while the oil may be put in a tsp at a time.
6 - All the ingredients and utensiles should be very cold before being used for making salad dressing.
7 - A silver fork or an egg beater may be used to whisk the materials together.
8 - The mayonnaise can be varied by substituting tarragon vinegar for the ordinary vinegar or by
stirring in chopped celery, olives, pimento, etc.
9 - It may be tinted by adding the juices of green vegetables, such as parsley and watercress or the
pounded coral of lobster.
