Potato Salad III
1 qt new potatoes
1 tbsp oil
2 tbsp vinegar
2 stalks celery, chopped until fine
1 onion, chopped until fine
1 tbsp capers
1 tbsp chopped parsley
pepper thin mayonnaise dressing
1 - Boil 1 qt new potatoes, letting them cook through but not long enough to become too soft.
2 - After they have cooled, slice them and mix with them 1 tbsp oil and 2 tbsp vinegar.
3 - Then add 2 stalks celery and 1 onion chopped until fine, 1 tbsp capers and 1 tbsp chopped
parsley, seasoning all to taste with salt and pepper.
4 - Take a thin mayonnaise dressing and fold it into the mixture.
5 - Serve, garnished wiyth lettuce and lemon.
