English Plum Pudding
1 lb chopped suet
1 lb currants
2 lbs raisins
1 lb mixed candied fruit peel chopped
2 cps flour
2 cps crumbs
2 cps brown sugar
1 tsp mixed spices 8 eggs, thoroughly beaten
hard sauce or liquid sauce
1 - Take 1 lb chopped suet, 1 lb currants, 2 lbs raisins, and 1 lb mixed canied fruit peel chopped,
mixing all together and dredging with flour.
2 - Then take 2 cps four (less what has been used for dredging), 2 cps crumbs, 2 cps brown sugar,
and 1 tsp mixed spices, and, after mixing together add 8 eggs which have been thoroughly beaten.
3 - Stir well together the two mixtures.
4 - Either wrap in flour-spread squares of unbleached muslin or put into greased molds.
5 - Let them boil for from 5 to 7 hours.
6 - When served use hard or liquid sauce.
