Indian Pudding II
1/3 cp Indian meal
1/2 cp molasses or brown sugar
1/2 tsp gonger
1/2 tsp cinnamon
1/2 tsp salt
1/2 cp raisins, figs or dates
hard sauce or cream
1 - Over 1/3 cp Indian meal pour gradually 5 cps scalded milk, stirring constantly and let it cook 20
minutes in a double boiler.
2 - After stirring in 1/2 cp molasses (or brown sugar), 1/2 tsp ginger, 1/2 tsp cinnamon and 1/2 tsp salt,
turn the mixture into a pudding-dish that has been buttered, and let it bake 2 hours in a slow oven
in a pan of hot water.
3 - If desired, 1/2 cp ofd raisins, dates or figs may be added before baking.
4 - Serve with hard sauce or cream.
