Snow Pudding II
1 tbsp gelatine
1/2 cp sugar
1/4 cp lemon juice
whotes of 2 eggs
1 - Soak 1 tbsp gelatine in 1/4 cp cold water for 3 or 4 minutes, then pour over it
1 cp boiling water to dissolve it.
2 - Stir in 1/2 cp sugar and 1/4 cp lemon juice(strained).
3 - Let it stand in a cool place until it begins to set; then beat into a froth with a strong egg-beater.
4 - Beat the shites of 2 eggs until stiff, and whip them lightly into the gelatine mixture.
5 - Place in a glass dish and serve with whipped cream or with a boiled custard made with the yolks of the eggs.
