1/4 cp pearl tapioca (or 1 1/2 tbsp minute tapioca which does not require soaking
2 cps scalded milk
1/2 cp sugar
2 egg yolks
a little salt
1 - Take 1/4 cp pearl tapioca (or 1 1/2 tbsp minute tapioca which does not require soaking).
2 - After looking over and (if pearl tapioca) soaking 1 hour in enough cold water to cover, drain
and cook in 2 cps scalded milk in double boiler until tapioca becomes transparent.
3 - Take 1/2 cp sugar and stir half of it in the milk.
4 - Beat 2 egg yolks slightly and add to them the remainder of the sugar and a little salt.
5 - On this egg mixture slowly pour the hot mixture, stirring them together.
6 - Let the whole cook in the double boiler until it thickens.
7 - Then, after taking the pudding from the heat, fold in the whites of the eggs beaten stiff.
8 - Add any desired flavoring, and chill before serving.
