Apple Tapioca II
1 cp pearl tapioca or 3/4 cp minute tapioca
1/2 tsp salt
sugar and cream pr cream sauce
1 - Look over and soak for 1 hour, in enough water to cover, 1 cp pearl tapioca;
or use 3/4 cp minute tapioca, which needs no soaking.
2 - Drain the tapioca and let it cook until transparent in a double boiler with 3 cps
boiling water and 1/2 tsp salt.
3 - When you have pared and cored 6 apples, put them in a buttered baking-dish and sprinkle
with sugar; then pour the tapioca over them and let them bake until soft, in a moderate oven.
4 - Serve with sugar and cream or a cream sauce.
