3 cps scalded milk
1 t5bsp cornstarch
1 cp sugar
small pinch of salt
1 cp mixed fruit
1 tbs each of cherries, citron, candied pineapple and blanched almonds
2 tbsp raisins
1 - To 3 cps milk scalded in a double boiler add 1 tbsp cornstarch which has been
mixed with a little cold milk.
2 - Beat 3 eggs and mix with them 1 cp sugar and a small pinch of salt.
3 - Stir this into the scalded milk and continue to stir as it heats until it thickens.
4 - (2 cps milk and 1 cp cream may be used instead of all milk.)
5 - When the custard has cooled add 1 cp mixed fruit well chopped.
6 - 1 tbsp each of cherries, citron, candied pineapple and blanched almonds,
with 2 tbsp raisins or any preferred combination - may be used.
7 - In freezing do not make pudding too stiff.
8 - Transfer to a mold and let it stand packed in ice and salt about 2 hours.
