Sponge Cake II
1 cp granulated sugar
1 tbsp lemon juice
grated rind of 1/2 lemon
1 - Take 6 eggs, separating whites from yolks and first beating yolks until they are thick
2 - To them add gradually 1 cp granulated sugar and 1 tbsp lemon juice and the grated rind of 1/2 lemon.
3 - Next, fold in half of the egg-whites which have been beaten stiff; cut and fold in 1 cp carefully sifted
flour, then the remainder of the stiffly beaten egg whites, mixing lightly.
4 - Pour into an ungreased pan and bake in a very moderate oven for 45 to 60 minutes.
