Lady Baltimore Cake
1/2 cp butter
1 cp sugar
white of 1 egg, unbeaten
1/2 cp milk
1 tsp vanilla or 1/2 tsp almond extract
1 3/4 cps flour
2 tsp baking powder
beaten whites of 2 eggs
1 1/2 cps sugar
1 cp chopped pecan nuts or blanched almonds
1/2 cp chopped figs
1/2 cp chopped seeded raisins
1/2 tsp vanilla extract
1 - Cream 1/2 cp butter, adding 1 cp sugar and the white of 1 egg, unbeaten.
2 - Beat while adding slowly 1/2 cp milk and 1 tsp vanilla or 1/2 tsp almond extract;
then stir in 1 3/4 cps flour sifted with 2 tsp baking powder, and fold in the unbeaten whites of 2 eggs.
3 - Pour into square layer-cake tins, greased and let it bake for about 15 minutes in a hot oven.
4 - For filling between layers take 1 1/2 cps sugar and let it boil in 1/2 cp water, unstirred, until
a sirup forms which will thread.
5 - Pout this gradually over the beaten whites of 2 eggs and stir in 1 cp chopped pecan nuts or blanched almonds,
1/2 cp chopped figs and 1/2 cp of chopped seeded raisins, with 1/2 tsp vanilla extract.
6 - Tyhis cake may be covered with white icing.
