6 medium size Maine Potatoes
1 cp cornflakes, rolled fine
4 tbsp mayonnaise
1 - Peel potatoes, cover with boiling salted water.
2 - Cover and boil for about 30 minutes, or until potatoes may be pierced easily with a fork
3 - Drain. Place mayonnaise on waxed paper, roll potatoes in it and then in the cornflakes.
4 - Place in a buttered baking pan.
5 - Toast under the oven broiler, turning frequently until golden brown.
Yield: 6 portions.
