Maine Potato Chowder
2 slices salt pork
1 sliced onion
2 cps diced potatoes
1 cp corn
4 cps scalded milk
salt and pepper
3 tbsp butter
6 soda crackers
1 - Cut pork into small pieces and fry until crisp.
2 - Remove bits of pork. Add onion and cook slowly for 5 minutes.(do not brown)
3 - Parboil potatoes for 5 minutes in water to cover.
4 - Add potatoes to fat with 2 cps water in which they were cooked.
5 - Cook until potatoes are tender, then add corn and milk.
6 - Season with salt and pepper.
7 - Pour over crackers in soup plates and sprinkle with bits of salt pork.
Yield: 6 portions
