1 qt sliced Maine potatoes
4 tbsp butter
3 tbsp flour
1 1/2 cps rich milk
salt and pepper
1/2 cp grated cheese
1 - Chill potatoes in cold water for an hour.
2 - Make a cream sauce with butter, flour, and milk.
3 - Add well drained potatoes and cook over boiling water for 5 minutes.
4 - Season. Butter a bread pan and sprinkle with chopped parsley.
5 - Add the potatoes carefully and press into the pan evenly, so the surface will be flat.
6 - Bake in a slow oven then turn to hot platter, sprinkle with grated cheese and return
to the oven to melt the cheese. 7 - Garnish with more parsley.
