Creamed Potatoes in Shells
6 Maine potatoes
1 tbsp soft fat
1 tsp salt
2 cps thin white sauce
2 tbsp diced pimientos
2 tbsp grated cheese
1 - Scrub potatoes and rub with fat.
2 - Bake in very hot oven (450 degrees) 1 hour, or until tender.
3 - Remove from oven.
4 - Cut a lengthwise slice from the top of each.
5 - Eith a small spatula mark hte inside of each potato into small squares.
6 - Remove carefully without breaking shells.
7 - Sprinkle with salt. Combine white sauce and pimiento and lightly stir in potato.
8 - Heap diced, creamed potato lightly into shells.
9 - Sprinkle with cheese and dust with paprika.
10 - Return to oven until cheese is melted.
Yield: 6 portions
