5 medium-sized Maine Potatoes
1/4 cp fat
1 - Wash potatoes but do not peel.
2 - Cook in boiling salted water until just tender.
3 - Drain. Cut with skins on, into 1/4inch slices and saute' in fat until nicely browned on both sides,
being careful not to break the slices.
4 - Sprinkle with salt and pepper and serve at once.
Approximate yield: 6 portions
