Duchess Potato Balls
8 medium sized Maine Potatoes
3 eggs, separated
1/4 cp melted butter
1 tsp salt
1/4 tsp pepper
2 tbsp olive oil
3/4 cp find dry bread crumbs
1 - Peel potatoes. Cook in rapidly boiling water until tender.
2 - Drain and force through ricer.
3 - Beat together 1 egg and 2 egg yolks. Add butter, salt and pepper
4 - Add to potatoes. Beat well. Cool. Form into balls the size of very small oranges.
5 - Beat 2 remaining egg whites slightly, add olive oil.
6 - Dip balls into this mixture. Roll in erumbs.
7 - Fry in deep hot fat (400 degrees) 1 minute or until golden brown.
8 - Drain.
Approximate yield: 24 potato balls, or 8 portions.
