Potatoes in Cheese Sauce
3 tbsp butter or margerine
3 tbsp flour
3/4 tsp salt
3 cps bottled milk or 1 1/2 cps evaporated milk and 1 1/2 cps water
1/2 lb American cheese, grated
4 cps diced cold pared baked Maine potatoes
1 - Melt butterm in double boiler; add flour, salt and pepper, and blend.
2 - Then add milk, and cook until thick, stirring constantly.
3 - Cover and cook 10 minutes, stirring occasionally.
4 - Then add cheese and cook, stirring until melted.
5 - Add the potatoes, heat and serve
Serves 6. To serve 2 or 3, make half this recipe.
