Potatoes in their Jackets
9 medium Maine potatoes
4 tbsp melted butter or margerine
1 - Scrub the potatoes well, then pare off a strip about 1/2 inch wide around the center of each
or simply prick with a fork.
2 - Cook in boiling salted water to cover, in a covered saucepan, until tender - about 25 minutes.
3 - Drain, remove the skins or not, as preferred, then place uncovered over low heat to dry out and make mealy.
4 - Serve with melted butter poured over them. Or to give a different touch, add a sprinkle of chopped parsley
