2 cps hot riced Maine potatoes
2 tbsp butter
1/2 tsp salt
1/8 tsp pepper
1/4 tsp celery salt
Few grains cayenne
Few drops onion juice
Yolk 1 egg
1 tsp finely chopped parsley
1 - Mix ingredients in the order given, and beat thoroughly, shape and dip in crumbs,
egg, and crumb again. 2 - Fry 1 minute in deep fat at 365 to 380 degrees and drain on brown paper.
3 - Croquettes are shaped in a variety of forms. The most common way is first to
form a smooth ball by rollong one rounding tbsp of mixture between the hands.
4 - Then roll on a board until of desired length and flatten ends.
Yield: 6 to 8 portions.
