Fried Potatoes, Farm Style
Pare and cut thin slices Maine potatoes to make a quart.
Place in frying pan with 2 tbsp of savory meat drippings and enough cold water
to cover the bottom; sprinkle over a tsp of salt and, if desired add a tbsp of
minced onion, cover closely, and cook 10 to 15 minutes.
The steam from the water will practically cook the potatoes.
When they begin to brown on the bottom, they should be turned occasionally with
a pancake turner to brown more evenly.
Yield: 6 portions
