Shrimp and Potato Pudding
4 cps fluffy mashed Maine potatoes
1 cp finely minced celery
1 lb of cooked shrimp, coarsely chopped
1 egg, beaten
1/2 cp finely minced parsley
2 tbsp scraped onion juice
salt and pepper to taste
1 - Combine the ingredients in the order given.
2 - Transfer to a baking dish rubbed with butter or margerine;
3 - Bake about 35 minutes in a moderately hot oven (35- - 375 degrees).
Yield: 6 portions
