4 cps diced, uncooked Maine potatoes
1 small onion, minced
1 tsp salt
2 pimientos, cut in strips
2 cps medium white sauce
1 cp grated American cheese
1/2 cp cracker crumbs 2 tsp butter
1 - Place potatoes in kettle with onion and salt, cover with boiling water and boil for 5 minutes
2 - Drain and add the pimiento strips. Place in a greased baking dish
3 - Prepare white sauce by melting 4 tbsp butter, blending in 4 tbsp flour,. and adding 2 cps milk.
4 - Stir constantly until a smooth, thickened sauce is formed.
5 - Season with salt and pepper and add cheese.
6 - Pour over potatoes in the baking dish.
7 - Sprinkle with cracker crumbs and dot with butter.
8 - Bake in a moderate oven of 350 degrees until browned (20 to 25 minutes)
