3 tbsp flour
2 tbsp butter
1 cp milk, scalded
1 pint oysters
salt and pepper
2 cps whipped Maine potatoes
1 egg white, slightly beaten
1 - Blend flour and butter in a double boiler; add milk and cook until thickened.
2 - Add oysters, (with liquor), salt, pepper, and cook until oysters curl at the edges.
3 - Pour into a greased shallow baking dish. Top with whipped potatoes.
4 - Brush with egg white, and sprinkle with paprika.
5 - Bake in moderate oven (350 degrees) 20 minutes, or until golden brown.
6 - Serve hot, garnished with bits of parsley.
