Potatoes Baked with Sausage
Select 6 medium - large Maine potatoes of uniform size. Wash and pare.
With an apple corer make a cavity lenghtwise through the center of each potato.
Insert a small link sausage in the cavity or stuff with loose sausage.
Arrange the potatoes in a baking dish, dot with butter, sprinkle with salt and pepper
and add just enough water to cover the bottom of the dish well.
Cover closely and bake in a medium hot oven (375 degrees) until potatoes are well done.
The lid may be removed the latter part of the cooking period, and
the potatoes allowed to brown slightly.
Yield: 6 portions
