Beef Roll with Potato Stuffing
2 lbs ground cooked beef
1 tbsp minced onion
2 tbsp Worcestershire sauce
1 egg, slightly beaten
salt and pepper
3 cps mashed Maine potatoes
1 - Add seasonings and egg to beef.
2 - Spread on wax paper or breadboard and pat out to about 1/3 inch thickness.
3 - Form mashed potatoes into roll and wrap meat around the roll, overlapping edges, and press firmly
4 - Strip with bacon and bake in a moderate oven (350 degrees) 35 - 40 minutes.
Yield: 6 portions
