Potato Puffs with Carrots and Peas
6 Maine potatoes
salt and pepper
top milk or cream
2 cps cooked peas
2 cps diced cooked carrots
1 - Boil potatoes, put through ricer or mash.
2 - Season with salt & pepper and butter, and add sufficient milk or cream to moisten.
3 - Beat until smooth and arrange in rounds or nests on buttered baking sheet.
4 - Brown slightly in oven, remove to serving plate and fill with buttered peas and carrots.
Yield: 6 portions
