Potato Carrot Wheel
5 medium new Maine potatoes
crushed corn flakes
5 small carrots
8 small onions
4 tbsp salad oil
1 - Roll potatoes in corn flakes. Brush vegetables with additional salad oil.
2 - Radiate carrots from center of round baking dish.
3 - Place 3 onions in the center of the carrot wheel.
4 - Alternate potatoes and onions around edge of dish.
5 - Season with salt and pepper. Sprinkle with salad oil.
6 - Do not add water. Cover and bake in moderate oven (350 degrees) for 1 hour.
7 - Remove cover during the last 30 minutes.
