French Fried Potatoes
Wash and pare 8 small potatoes, cut in eighths lengthwise and soak in cild waqter.
Take from the water, dry with towels and fry, a few at a time in deep fat
(385 degrees) until potatoes float on top and are golden brown.
Dry on brown paper and sprinkle with salt.
Bring temperature up to 385 degrees between each frying,
but take care not to have the fat too hot, as potatoes must be
cooked as well as browned.
