Potatoes in Parsley Butter
Pare and cut 6 Maine Potatoes into balls or cubes.
Boil in salted water 10 minutes.
Drain and barely cover with milk, cook slowly until, the milk has been absorbed.
Cream 2 tbsp butter with 1 tbsp lemon juice and 1 tbsp finely chopped parsley.
Season with walt and paprika, add to the potatoes and toss lightly
until all are well covered with the sauce.
Yield: 4 to 6 person
