Pare, boil, an mash enough Maine potatoes to make a cup.
Beat until no lumps remain, then add 1/2 cp rich milk or cream.
1/2 tsp salt, 1 tbsp melted butter, and the yolks of 2 eggs beaten slightly.
Whip the potatoes to a velvety smoothness, then fold in the stiffly beaten whites
and a tablespoon of lemon juicewith a tsp of grated rind.
Turn into a greased pudding or souffle' dish, scatter grated cheese over the top.
Bake about 20 minutes in a moderately hot oven.
Serve with roast beef or chicken.
