Creamed Potatoes, Country Style
Cut cold boiled Maine potatoes inn small dice to make 3 cps.
Put in a heavy frying pan and add milk to cover them.
Sprinkle with 3/4 tsp salt and 2 tbsp flour.
Add 2 tbsp butter and stir slightly to mix.
Cook slowly until thickened and creamy, stirring 2 or 3 times.
Just before serving, sprinkle with a tbsp of chopped chives orm young spring onions.
Yield: 6 portions
