Escalloped Potatoes and Spinach
1 1/2 cps uncooked spinach, shredded
2 tbsp melted shortening
1 tbsp flour
1 cp milk
1 tsp salt
1 lb pork sausage
1 - Place alternate layers of potatoes and spinach in a well oiled casserole.
2 - Combine shortening and flour. Mix thoroughly.
3 - Add milk gradually. Cook for 5 minutes, stirring constantly.
4 - Add salt. Pour sauce over potatoes and spinach.
5 - Shape sausage in balls. Place over potatoes.
6 - Bake in moderate oven (350 degrees) about 1 1/2 hours.
Yield: 6 portions
