Wash and boil in their skins 3 lbs of new Maine
potatoes. Put 1/4 cp of butter in a saucepan.
Cut it up an pour over it 2 tbsp of olive oil

Add some chopped parsley and some chopped chives,
a little freshly ground nutmeg, a pinch of flour,
and some salt and pepper.
When then potatoes are cooked, peel and cut into
quarters or eighths and put them into the butter mixture.

add the juice of 1 lemon.
