Stuffed Baked Potatoes
9 baked Maine potatoes, 1/2 cp minced onion, 3 tbsp creamery butter,
3 cps minced cooked ham, 1 tbsp minced parsley, 1/4 tsp paprika,
1/2 cp of well seasoned thick white sauce, 6 thin slices Amrerican Cheese.
Scrub the potatoes and bake for 1 hour or until tender.
Saute' the onion in butter until tender. Add with ham, parsley, and
paprika to the white sauce. Cut slice off the potato lengthwise and scoop
out the contents, leaving about 1/4 inch of potato in the shell.
Prepare as mashed potatoes. Fill the shells at least half full with the
ham mixture. Pile the mashed potatoes on top, but don't pack them down.
Cover with cheese and bake until the cheese melts and stuffing is heated through
