Plain Stuffed Baked Potatoes
6 large baked Maine potatoes
1/3 - 1/2 cp hot milk
1 1/2 tsp salt
1 tsp minced onion
1/8 tsp pepper
4 tbsp butter
1 - Cut the hot potatoes in halves lenghtwise, or cut off their tops lengthwise
2 - Scoop out the centers, mash or put through a ricer.
3 - Add hot milk. The exact amount depending on the size of the potatoes.
4 - Beat until smooth
5 - Stir in the seasonings and the butter. Beat until very light.
6 - Refill shells, brush with melted butter and return to moderately hot
oven (375 to 400 degrees until brown.
