Cheese Potato Souffle'
2 cps mashed Maine potato
3 eggs, separated
1/2 tsp salt
1/8 tsp white pepper
3/4 cp grated cheese
2 - Combine hot mashed potato, well beaten egg yolks and seasonings,
3 - add 1/2 cp grated cheese and last fold in lightly the stiffly beaten egg whites.
4 - Place in a greased pan and sprinkle the remaining chees over the top
5 - Bake in a moderate oven (375 degrees) in a baking dish in a pan
containing an inch of hot waterfor 25 to 30 minutes.
7 - Serve at once
