1/2 cp hot water or milk
2 tsp salt
2 tsp fat
2 tsp sugar
3 cps mashed Maine potatoes
1/2 cp compressed yeast
1/4 cp lukewarm water
6 cps sifted flour
1 - Put hot water, salt, fat, and sugar in bowl, add mashed potatoes, mix well
2 - Soften the yeast in lukewarm water (1/4 cp), and add to the potatoes
3 - Add 1 cp flour and knead in thoroughly, then add the second cup kneading
thoroughly, then the remaining cups.
4 - This dough will seem very stiff and difficult to knead but all the flour
must be added or the dough will be very soft at the second kneading.
5 - Let rise until double its bulk (about 3 hours)
6 - Knead slightly and shape into loaves.
7 - Let it rise until double its bulk and bake in a moderate oven (375 degrees)
