Potato Balls with Almonds
Mash Maine potatoes, ad butter, and hot milk to fairly soft but not
too soft consistency. Whip until light and season well.
Add 1 egg for every 4 or 5 potatoes. Mix it in well.
Drop rough balls from the top of a spoon into a well greased
baking sheet or pan. Sprinkle tops generously with julienne strips
of blanched almonds.
Bake in hot oven (400 degrees) until heated through and lightly browned.
