Baked Eggs with Pimiento Potatoes
1 1/2 cps hot mashed Maine potatoes, seasoned to taste with salt, pepper, butter, and milk.
1 canned pimiento forced through strainer
1 - Beat potato and pimiento vigorously until thoroughly mixed.
2 - (If you have an electric mixer you may simply chop the pimiento,
add it to the potato and then whip them together at high speed.)
4 - Pile potatoes evenly on a buttered baking dish or in a casserole
and make four depressions in the top.
5 - into each depression slip a raw egg and nbake in moderate oven.(375 degrees)
10 minutes or until eggs are set.
Yield: 4 portions
