Potatoes Stuffed with Peanut Butter
Rub skins of 6 Maine potatoes with softened fat and bake as usual.
When done, remove from oven and cut lenghtwise slice from the top of each potato
Scoop out the potato with a spoon, being caareful not to break the skins.
Mash the potato and season well with salt, pepper, butter, and milk,
and add one tsp of peanut butter for each potato.
Mix until light, then refill shells.
Sprinkle grated cheese or crisp diced bacon over top and put back
in oven to reheat and brown.
