3 tbsp butter or bacon fat
1 small onion, sliced thin
salt and pepper
2 cps cold boiled potatoes, diced
1 tbsp parsley, finely chopped
1 - Melt butter or bacon fat in frying pan, add onion and cook until brown.
2 - Add diced potatoes and fry until light brown, shaking pan occasionally
3 - Season with salt and pepper. Add parsley and serve.
