Potato Chicken Casserole
3 cps hot riced Maine potatoes
1 (No 2) cxan asparagus
1/2 tsp salt
1/8 tsp pepper
1/8 tsp nutmeg
2 cps chopped cooked chicken
1 cp thick sour cream
1 - Arrange potatoes over bottom and around sides of greased casserole
2 - Drain asparagus and arrange stalks over potatoes.
3 - Sprinkle with seasonings, then add chicken.
4 - Top with sour cream then bake in a moderately hot oven
(375 degrees) about 20 to 25 minutes.
Approximate yield: 6 portions
