Russian Style Potatoes
6 medium-sized Maine potatoes
salt and pepper
1 small onion
2 tbsp butter
3 tbsp sour cream
1 - Wash, pare and dice potatoes, then put in a stew pan with just enough cold water
to cook them slowly - they should not be covered with water.
2 - Season wellm with salt and pepper, add the onion, finely chopped,
cover and simmer until tender - they should not become mushy.
3 - Add butterm and sour cream (more may be added if liked),
cover and shake the pan gently.
4 - Let stand a few minutes before serving.
Yield: 6 portions
