2 cps Maine potatoes, boiled and riced
1 tbsp melted shortening
1 tsp salt
1 cp milk
1 cp flour
2 tsp baking powder
1 - Beat eggs until light, add potatoes(boiled, riced, and allowed to cool),
shortening, salt, and milk, then flour sifted with baking powder and beat to blend thoroughly 2 - Bake immediately in a hot waffle iron.
3 - Serve with butter and maple syrup.
Yield: 6 four-section waffles
