Bacon and Potato Omelet
1 cp cold Maine potatoes, chopped fine
1/2 cp bacon, diced
1/3 tsp salt
1/8 tsp pepper
1 - Brown potaoes and bacon together in a frying pan.
2 - Separate eggs, beat yolks until creamy, add seasonings
and stir into the potatoes and bacon.
3 - Fold in stiffly beaten egg whites and cook over low heat until
brown on the bottom.
4 - Fold and serve at once.
Yield: 6 portions
