Potatoes Stuffed with Brazil Nuts
6 Maine potatoes
1/2 cp hot milk
1 1/2 tsp salt
1/2 cp Brazil nuts, sliced
6 whole Brazil nuts
1 - Cut potatoes in half lenght-wise and scoop out centers.
2 - Press through ricer, add hot milk and beat until smooth.
3 - Add seasonings and sliced Brazil nuts and beat well.
4 - Refill potato shells, insert whole brazil nuts into each.
5 - Return to the oven (400 degrees) about 15 minutes and bake until brown.
Yield: 6 portions
