Dainty Potato Buns
1/2 cp mashed Maine potatoes
1/2 cp milk, scalded
1 cake compressed yeast
1/4 cp lukewarm water
4 cps sifted cake flour (about)
1 egg, well beaten
2 tbsp sugar
1 tsp salt
3 tbsp melted butter
1 - Combine potatoes and milk. Cool to lukewarm.
2 - Soften yeast in water and add to potatoes.
3 - Add enough flour to make a batter, beating well.
4 - Cover and let rise in a warm place until light
5 - Add egg, sugar, salt, butter, and remaining flour to make a soft dough.
6 - Knead lightly until smooth. Place in a greased bowl and let rise again until
double in bulk.
7 - Roll out 1/2" thick. Cut with a floured biscuit cutter.
8 - Place in a greased pan and let rise until double in bulk.
9 - Bake in a hot oven (400 degrees) for about 15 minutes, or until done.
Makes 12 to 15 buns.
